- 500g pork shoulder or loin, cut into cubes
- 250ml dry red wine
- 2 tablespoons coriander seeds, crushed
- Salt and pepper, to taste
- 3-4 tablespoons olive oil
Instructions:
- Marinate the Pork:
- Combine the pork cubes with the red wine, crushed coriander seeds, salt, and pepper in a bowl. Ensure the pork is evenly coated.
- Cover the bowl and let the pork marinate in the refrigerator for at least 4 hours, or overnight for best results.
- Cook the Pork:
- Take the pork out of the marinade but save the marinade for later.
- Heat the olive oil in a large frying pan over medium-high heat, then add the pork cubes. Brown the pork on all sides.
- Simmer:
- After browning the pork, lower the heat to medium and pour the reserved marinade into the pan.
- Allow it to simmer gently. Cover the pan and cook for about 45 minutes, or until the pork is tender and the sauce thickens slightly.
- Serve:
