Ingredients:

  • 500g pork shoulder or loin, cut into cubes
  • 250ml dry red wine
  • 2 tablespoons coriander seeds, crushed
  • Salt and pepper, to taste
  • 3-4 tablespoons olive oil

Instructions:

  1. Marinate the Pork:
    • Combine the pork cubes with the red wine, crushed coriander seeds, salt, and pepper in a bowl. Ensure the pork is evenly coated.
    • Cover the bowl and let the pork marinate in the refrigerator for at least 4 hours, or overnight for best results.
  2. Cook the Pork:
    • Take the pork out of the marinade but save the marinade for later.
    • Heat the olive oil in a large frying pan over medium-high heat, then add the pork cubes. Brown the pork on all sides.
  3. Simmer:
    • After browning the pork, lower the heat to medium and pour the reserved marinade into the pan.
    • Allow it to simmer gently. Cover the pan and cook for about 45 minutes, or until the pork is tender and the sauce thickens slightly.
  4. Serve:
    • Afelia is traditionally accompanied by pourgouri (bulgur pilaf) or boiled potatoes and a fresh salad.
    • This dish is a delightful representation of Cypriot culinary traditions, perfect for a hearty meal.
